I’ve been pretty adamant about ignoring the fact that it’s fall. Seriously, I’m still wearing flip flops and forget to bring a jacket everywhere. And of course, I’m battling a cold right now. I wonder why?
It’s funny, now that I’ve moved in with Andy, I barely cook! This man is a master in the kitchen and I’m totally blaming it on the fact that he’s worked in restaurants for over 10 years. He’s picked up on all the simple tricks in the kitchen that totally confuse me. I’m a total recipe follower and he’s a complete improviser. There’s just some things that I wouldn’t think to do because a recipe doesn’t say to do that, that will make his cooking much better and much easier.
So I improvised a bit with this apple cake. I took a mix of three different recipes and made a little mix of my own. You can find really simple recipes and overly complicated recipes that have you making your own caramel drizzle by scratch. So without further ado here’s my improvised apple cake. I used all honeycrisp apples since I still had a whole peck of them left from picking apples the other day. Honeycrisp apples are delicious and freaking humongous!
Have you gone apple picking or to a pumpkin patch this season? I feel like it was a pretty big thing to do in DC when I was there but it’s huge here in Chicago, especially because there’s no fun fall wineries to visit out here. Sigh 🙁
