I have to tell you guys, I don’t think I’ve ever been so excited to be cooking at eating at home. If you know me, I’m a fiend for eating out and trying new restaurants. I’m obviously dying to check out the Chicago foodie scene but after cleaning out my fridge one week before moving (AKA two weeks ago) and having to eat out every meal. I’m over it.
Andy and I have been working off a bare-bones kitchen but making some fun new recipes. Marinated chicken on the grill, beef skewers, wings, and more. Making the main dish is never too hard for me but I always struggle with finding a good side to pair with the meal.
This is watermelon salad is a perfect side, starter, snack, everything! It takes a few minutes to put together and is sure to wow guests. The longest part is just chopping up all the watermelon. Once mixed together, you can let the salad sit briefly to let the flavors marry, however this should be eaten that day or refrigerated and eaten the day after at the latest.
